Hello, my name is Courtney, and I am a recovering carbaholic.
No, I still eat carbs - I mean, I haven't given them up altogether - but my recovery process does involve reigning in my carb intake.
I can see you shaking your head in dismay - either it is because "low-carb" sounds awful, akin to taking a polar ice-bath in January (why to people subject themselves to such torture??) or because it is so hard to believe I was once, yes, a carbaholic. (She ate HOW much bread and cookies every day?)
That's the thing. I don't really have a problem with carbs. Maybe they actually have a problem with me.
I mean - for the most part, we got along just fine for the majority of my life. And as long as I watched my overall caloric intake, I managed my weight swimmingly. But now that I am prepping for a bikini competition, I have found myself needing to go a little further with my normal healthy eating habits.
As the famous Ancient-Greek saying goes, "Know Thyself." Well, I know myself, and myself likes to bake lots of bread and cookies that myself also likes to eat. Healthy bread and cookies, sure... but as carbs do, they often goad me into eating more carbs. And more carbs means more calories, more blood sugar, and more stored calories as fat.
I'll spare you all the dietic details. You're already here because, possibly, you know thyself, too. Or maybe you're still trying to know thyself... and whether or not it's the extra carbs that have been your undoing in the health/weight department. And while you're here, you want to know what you CAN eat.
This is the good part. There are lots of things to eat here. Lots and lots of delicious, nutritious things.
